Baked Eggs in Tortilla Cups: Lightly spray a muffin tin. Cut mini whole wheat tortillas into fourths. Place two pieces of tortilla in muffin tin and gently press to form cup. Place fresh spinach in each cup and crack in an egg. Sprinkle with parmesan cheese and bake.
