Day 244: Eggplant, Chick Pea & Cumin Salad with Raisins & Apples

Cook chunks of eggplant in olive oil with quite a bit of cumin and some fresh black pepper. Add raisins and cook a bit more. Add hot eggplant mix to bowl of cooked chickpeas (or canned). Mix.  Fold in peeled Granny Smith apple cut into chunks.
